First we will have to fry our baked pumpkin. It will take a while for the pumpkin to ripen, so it will need to be prepared in advance.

I prepared pumpkin pie from sheets made of egg white. I prepared the two sheets separately so that one I made with large ground cinnamon, and the other I made with vanilla. So I got a fluffy and very fragrant pie in two colors.

For the first sheet, I separated the egg whites from 3 eggs and beat them well with the mixer until I got a strong foam like meringue. Then I added the raw sugar and continued to beat everything in the mixer until the sugar melted. I added black flour, baking powder, sesame oil and large ground cinnamon. When it was homogenized, I poured the composition into a large tray that I greased with a little oil and then I lined it with baking paper. I put it in the oven for about 10 minutes on low heat with the preheated oven.

For the second sheet I proceeded exactly as for the first, with the difference that here I did not add cinnamon in the composition, but I only added the vanilla essence.

When the baked pumpkin has cooled, I took out the whole core with a spoon and put it in a blender to homogenize it. I didn't add anything to the pumpkin puree - the charm of this cake is that we have to get the taste of baked pumpkin.

Bake paper in a tray and place the pumpkin pieces in a single layer.

Cover the tray with a lid or aluminum foil. Place in the hot oven for about 35 minutes, then check. The core must be penetrated, but not porridge. The knife will easily fit into a baked pumpkin, without spoiling its shape. If necessary, hold for another 5 minutes, then check again. For faster cooking, the pumpkin will be cut into smaller pieces.

After baking, leave the pumpkin in the pan until completely cooled.

Then use a concrete recipe. In the same stage it can be frozen in portions, either directly in pieces, or it will be passed with the vertical mixer beforehand. I prefer to freeze it in pieces and pass it together with the ingredients of the recipe (after thawing beforehand). You can peel it before freezing.

Peel a squash, grate it and squeeze the juice.

Put the grated pumpkin in a saucepan over low heat. Add the sugar and let it harden until it softens well and the resulting liquid evaporates.

When the pumpkin filling is ready, add the teaspoon of cinnamon, mix well and set aside to cool.

As long as the pumpkin filling cools, there is enough time to prepare the pie dough.

In a bowl, mix the water well with the oil and salt powder then add the flour until the dough begins to form.

When the dough becomes difficult to mix in the bowl, turn it over on the kitchen counter and continue to add flour and knead until you have a hard, non-sticky dough, but easy to spread.
