This recipe is like a zacusca, it is delicious, especially during fasting when there are fish releases. My mother has been making this recipe for about 30 years and we still haven't gotten bored of it, not even in a winter. missing from the pantry.
- For one serving:
- 3kg cleaned fish,
- 500gr onion,
- 1kg oil,
- 400gr broth,
- 7 tablespoons vinegar,
- was dafin,
- peppercorns and enibahar,
- 3-4 cloves of garlic.
Preparation time: over 120 minutes
RECIPE PREPARATION Winter fish paste:
The fish is cut into pieces and boiled in a miracle pot, along with water and vinegar and a little salt for 15-20 minutes, chopped onion is cooked with oil then add the fish that has been drained and given through the mincer, spices and salt to taste. Leave it to boil until the oil rises to the surface, then add the broth and crushed garlic, leave it on the fire for another 10 minutes, stirring constantly. When it has cooled, put it in jars and then boil it for sterilization.
Tomato paste for the winter - recipe
From these ingredients you can get about 800 grams of tomato paste (or 2 jars of 400 grams). If you want a larger quantity, keep the proportions shown below for tomatoes and salt.
Method of preparation
Wash the tomatoes and cut them into a cross on the bottom. Put them in a large saucepan and pour boiling water over them to cover them.
Scald them for 1 minute, then discard the water. Peel the tomatoes and then cut them into small pieces (remove the stalks).
They are then passed through a mincer or passed through a blender. While passing them, add a little of the suggested amount of salt. Salt stimulates the release of a greater amount of juice.
The obtained tomato paste is carefully poured into a gauze. Tie it to your mouth and squeeze it with your hands as much as possible. It is then tied over a sieve placed on a bowl and left to drain for a few hours.
The resulting paste after straining is put in bags with a seal (zipper) and kept in the freezer.
Tomato paste can also be put in jars, which are sterilized for 20 minutes.
The juice left after straining is not thrown away. Put in bottles and store in the refrigerator. You can drink it like any natural juice, or you can use it for cooking. To make it last longer, add salt.
Corcoduse in a jar Vegetable paste for sour soup
I put the vegetable pulp (without seeds) over the water in which they boiled again. I added salt (about 1 tablespoon of salt to 1 kg of fresh corcodus) and let it boil again, over low heat, stirring occasionally, until the water drops. Do not move away from the pot in which the vegetable paste is boiling, as there is a risk of smoking. I let it boil for another 30 minutes, from the moment it boiled.
Transfer the pasta to the jars prepared in advance. For 1 kg of fresh (uncooked) corcodus, 3 jars of 400 g are required. Seal the jars and boil in a bain-marie for 20 minutes.
I took a large saucepan, put it on the stove, placed a cloth inside the saucepan, put the jars over the cloth and poured cold water just over half the jars. I turned on the stove and, from the moment the water started to boil, let it boil for another 20 minutes. I turned off the heat and let the jars cool in the water in which they boiled. After they had cooled completely, I took the jars out of the water, wiped them and put them in the pantry. Corcoduse in a jar Vegetable paste for sour soup

Bring the pot to a boil, add the oil and add the vegetables, which were previously grated. After half an hour, add the rice and borscht, which will prevent the fish from breaking. Add the fish, add salt and pepper to taste and let it simmer until it boils. At the end, sprinkle the finely chopped larch.

Fish borscht is a traditional dish, being extremely loved by the Roma, especially on days with fish release.
How to decorate a cake with sugar paste
Once you have decided to use sugar paste, because it can be stored for several days in the refrigerator, spread it with powdered sugar until you get a layer 0.5 cm thick. Pick up the sugar paste from time to time as you spread it to make sure it doesn't stick, and powder it under it.
When the layer of sugar paste is thin enough and can cover the whole cake without problems, lift it with both hands and place it on top of the cake cooled well beforehand.
Arrange the sugar paste as centered as possible, then smooth from top to bottom, eliminating one by one all the empty spaces, all the folds that are formed due to the excess decoration. If air bubbles appear, break them lightly with a needle, then continue to smooth the surface.
When you have smoothed the whole cake well and made sure that the sugar paste is glued well to the base of the cake, cut the excess very carefully so that it remains smooth and uniform. From the excess cut, you can cut a thin stripe, which you can put at the base of the cake, so as to hide any imperfections.
