How to make chickpea croquettes
Drain the boiled chickpeas, put them in a bowl.
blend until the chickpeas are reduced to a puree.
Then add the chopped onion and chives, salt and pepper
Add the egg and work to incorporate everything well and obtain a homogeneous mixture.
Heat the oil in a pan.
With the help of two spoons, form quenelles then cook the croquettes for about 5 minutes per side.
Once golden, lift and place them on absorbent paper.
