There San Clemente tart it is a dessert that is usually prepared by tradition on November 23, the day dedicated to San Clemente. It is a delicious tart, with a fragrant base of hazelnut shortcrust pastry and then filled with a cream based on eggs, yogurt and citrus fruits. Given that it is really delicious, with a rich flavor but at the same time also very fresh, I don't see why not to prepare it also in other days of the year, especially since hazelnuts and citrus fruits are typical of the whole autumn-winter period; ) Well, this is my recipe, if you decide to try it, whatever time of year it is, let me know what you think;)
How to make the San Clemente tart
Start by preparing the pastry: put all the ingredients (flour, hazelnuts, yeast, vanilla, butter, sugar, salt and eggs) in a bowl and mix until you get a homogeneous dough.
Cover with cling film and let it rest for at least 30 minutes in the fridge, then spread it out on a lightly floured surface.
Line the mold and even the edges, prick the bottom, cover with parchment paper and dried legumes, then bake at 190 ° C, in a preheated ventilated oven, for 10 minutes.
After 10 minutes, remove the beans and parchment paper and cook for another 10 minutes, remove from the oven and lower the temperature to 150 ° C.
In the meantime, prepare the filling: beat the eggs and sugar together (without whipping them), then add the juice and grated peel of the citrus fruits and the yogurt and mix.
Pour the cream into the pastry shell, put it back in the oven and cook for another 30 minutes or until the cream is well compacted.
Let it cool, then leave in the fridge for 1-2 hours: the San Clemente tart is ready, serve it cold.
